This is what is happening in my kitchen right now.. so melt in your mouth good, you could almost make it your entire dinner! I haven’t decided what I am making with it yet, steak perhaps? I will have to let the weather decide, it is raining today in Columbus and might not be a “grilling” kind of night. I am working from home today and I might have to sneak into it early for lunch too!
What you need:
2 pounds fresh green beans or 4-5 cans of store bought green beans (tried it both ways and equally delicious)
Bacon -however much you want. Original recipe called for a pound, I say excessive. I use what I have on hand, today it is 6 slices
1 onion diced
3-4 large Yukon or Red Potatoes, peeled and cut into large cubes (Do NOT use russet or baking, my first 2 oops)
4 cups reduced sodium chicken broth
3 Tablespoons butter
1 Teaspoon salt
1 Teaspoon pepper
What to do:
Wash and trim your fresh beans into 2 inch pieces, cut your bacon into 1/2 inch sections. (or drain and rinse your canned beans)
Saute your bacon over medium heat in a large skillet then set aside. (not necessary but better)
Toss everything into your crockpot and cook on low for 6-8 hours or high for 3-4.
You will know it is ready when the potatoes are fall apart tender.
Yum-Yum now I need to figure out the main dish…Enjoy!
Note: Can also be done on the stove-top. Mix all together in a large pot, bring to a boil. Once boiling, cover and reduce heat to a medium-ish temp and cook for 3-45 minutes. Not as good as the crock pot though!
