“Andie’s Oopsed Up” Dorito Taco Salad

Here is what is happening on my Wednesday! I have a ton of errands to run and was craving a really good salad today, this is by far and away one of my favorites. I have this chilling in my fridge and ready for lunch later (Tip: do not add Doritos until you are ready to eat!)

I love dressing coated on just about anything, this is not Matt’s favorite, just a little too sweet for his liking… I think perfect!  What would seem to be a pretty easy recipe for a salad needed quite a bit of help until perfect. I have “0opsed” this more times than I can count. So here is my perfectly rescued, ready to rock and roll… Dorito Taco Salad. Enjoy!!!

What you need:

1 small head of  lettuce, chopped

1 pound hamburger ( I use Laura’s 96/4 Lean)

1 package taco seasoning ( reduced sodium in this house)

1 cup tomato

1 cup shredded cheese (any kind and add more or less to you liking)

1 can of beans drained ( I love chili beans, pinto or ranch style)

1 bottle of Catalina or French dressing ( I use low fat or fat free Catalina)

Bag of Doritos

What to do:

Brown your hamburger in a skillet and drain. Add in your taco seasoning mix. (do not add the water as if you were making tacos, Oops Alert…too runny)

Mix everything together in a large bowl and add dressing. Tip: Add about half the bottle and stir, check consistency. Add in small increments until you get the amount of dressing you like. Noted above, I love dressing so I used the entire bottle and loved it but not everyone is a dressing fanatic like me.

Chill in the fridge until nice and cold! Crunch up your Doritos and layer on the top. Add a dollop of sour cream and you  have a really hearty, tasty salad!
