Quick and easy to whip up… It’s Monday and that means Matt got to pick for his designated day “Matt Monday”. Today’s pick was Cheesy Meatloaf Muffins, sounds good to me! I used to have a friend in my old neighborhood that always showed up right around dinner time when I told her my “Meat Cups” were on the menu. Matt and I both love these and guess what they are served with? Yup, mashed taters and gravy! I always go the low fat route when I can, these taste just as good either way, your choice! I have been making cool stuff in cupcake tins for years. Meatloaf Muffins are a fun way to serve dinner and be creative. Valentines Day this year I used ketchup as a topper and wrote I Luv you on them…so cute! Top with your favorite sauce (Ketchup or BBQ for us) and you have a great Monday dinner! Enjoy!!!!
What you need:
1 1/2 pounds lean hamburger ( I use Laura’s lean 96/4) or full fat ground beef
3/4 cup egg beaters (or regular egg equiv.)
3/4 cup quick cooking oats (must be quick)
1/2 cup ketchup
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon onion powder
2 teaspoon minced garlic
3 sticks light string cheese
What to do:
Preheat over to 350 degrees and spray your 12 cup muffin tin generously.
Thoroughly mix together all of the ingredients, with the exception of the string cheese, in a large bowl.
Cut each piece of string cheese into 4 sections.
Spoon the meat mixture into the muffin tins evenly with a spoon. Take each piece of cheese and smoosh down into the center of the cup and cover completely with the meat mix.
Place in the center of the oven and cook for approximately 25-30 minutes or until the edges brown.
Take a knife and go around the edges of each cup and then let sit for 10 minutes to cool.
Note: Use can use 1 pound of ground beef but they will be significantly smaller and the cheese doesn’t cover as well. Still tastes great though!!! Heats up fabulous for left overs!
Note: Can do a no cheese option, same cooking time.
