It ain’t pretty but it sure is great…Crockpot Chicken Stuffing Casserole! One of my monthly favorites and so stinking easy.
What you need:
10-12 Chicken Tenderloin Pieces (approximately pound and a half)
1/2 Tablespoon Poultry Seasoning (this is a MUST have or it will not be the same) Note: original recipe calls for 1 Tablespoon, too much for us
1 10.75 can low sodium Cream of Mushroom Soup-any brand or any cream based soup like Cream of Chicken etc..
6 ounce box of stuffing mix (any kind) unprepared
2 cups Chicken Broth (reserved for stuffing)
What to do:
In a bowl mix the unprepared stuffing and chicken broth, set it aside and let the broth soak in for a few minutes.
Spray your crockpot, I use a 6 quart, lay your chicken tenderloins across the bottom evenly.
Sprinkle poultry seasoning across the top, soup comes next use a spoon to spread it evenly then pour the stuffing mix over the top.
Cover and cook on low for 4-6 hours. At the 4 hour mark I take a knife and go around the edges to prevent sticking and mine is usually done at 5 hours exactly and the chicken is fall apart tender.
Note: The stuffing does get very moist but we like it that way. Serve with mashed taters and biscuits and you have a chicken winner dinner!
