Andie’s Cheesy Beefy Yummy Taco Soup

Ever had a food you love so much that you stuff yourself every single time you eat it… until you feel sick? MMMMM MMMMM GOOOD! Yeah, this does that to me! Can make a grown man go weak in the knees. It’s been raining today and I was in the mood for good ole’ fashioned comfort food, so I pulled out my classic full on yummy Cheesy Beefy Taco Soup recipe! Not much better than super easy, super cheesy and super Taco-ey!  Warning: This has a little bite to it! I have toned this down about as much as I can without sacrificing flavor so if you don’t like a touch of spice then check out my Chicken Tortilla Soup (same concept but with Chicken and not near as spicy).

I serve this with crunched up tortilla chips and sour cream, Enjoy!

What you need:

1 pound hamburger ( I use lean)

1 small onion or onion powder

1 clove garlic minced ( I always cheat and use the squeeze minced)

16 ounce box of Velveeta cubed

2 cans Mild Rotel-not drained (more spice, do the Original or Spicy Rotel) Hint: I put mine in the processor for a few minutes for a smoother texture 

15 ounce can of beans drained and rinsed (I love reduced sodium black beans but any kind works)

small can of corn drained

10 ounce can of green enchilada sauce (Ethnic aisle in a can works great)

1 envelope taco seasoning (I use reduced sodium)

extra cup or 2 of shredded sharp cheddar cheese -I usually throw about a cup in half way through cooking and save the other cup to top when done(optional)

What to do:

Brown ground beef with your onion and garlic

Spray 6 quart crock pot generously with cooking spray

Place ground beef along the bottom and add the rest of your ingredients, stir well

I always cook mine on high for about 1 1/2 to 2 hours, but on low works for approximately 4 just be sure to stir frequently

Note: Top with your favorite taco toppings. We really mix it up but the crunched up tortilla chips and sour cream are a standard fave in this household

Heats up EXCELLENT for leftovers if you have any!!! Ours was almost gone tonight 🙂
